Cut from the shoulder joint, it releases bags of flavour after a long, slow cook. Dry rub with salt and pepper, and smoke or roast at a super low temperature, and always cook to temperature, not time - you're aiming for 90 degrees celsius.

Old Spot pigs and grass-fed native cow breeds like Aberdeen Angus, Beef Shorthorn, Hereford, and Belted Galloways, all crossed with Shorthorn Bulls, roam freely between the farm's meadows and RSPB wetlands.
