
How to cook the perfect Chateaubriand
A Chateaubriand is the king of British beef steaks, prized for its tenderness and rich, buttery flavour. Ingredients:

Sea salt and freshly ground black pepper

2 tbsp olive oil

50g unsalted butter

2 sprigs of fresh thyme

2 cloves of garlic, crushed
Method:

Prepare the meat: Remove from the fridge 30 minutes before cooking. Season generously with salt and pepper.

Sear: Heat olive oil in a heavy pan over high heat. Sear the meat for 2-3 minutes on each side until golden.

Baste: Add butter, thyme, and garlic. Spoon the melted butter over the meat for 2 minutes.

Roast: Transfer to a preheated oven at 200°C (180°C fan) and cook for 15 minutes for medium-rare.

Rest: Cover loosely with foil and let it rest for 10 minutes.
Ensure you rest the steak for at least 10 minutes to ensure the juices redistribute the juices evenly throughout the steak.

Champagne Sauce Recipe:

150ml Champagne

100ml double cream

1 shallot, finely chopped

1 tbsp Dijon mustard

Salt and pepper to taste
Soften the shallot in the pan. Add Champagne, reduce by half, then stir in cream and mustard. Simmer until thickened and season to taste.
Serve: Slice the Chateaubriand and drizzle with Champagne sauce. Pair with roast potatoes or seasonal vegetables.
