Village Maid Cheese have partnered with their local Siren Craft Brewery to create their Maida Vale cheese - a semi-soft, washed-rind cheese made from unpasteurised Guernsey cow's milk, vegetarian rennet, and an IPA rind wash.
The rind wash delivers a tangy, malty note and a buttery soft texture, while a "washed curd" method of making (where some whey is replaced with water) creates a flavour that's slightly milder than a traditional brie and almost fudge like in texture.
Made with milk and ale that's produced just two and five miles away from the cheesery respectively, it's a proper local cheese with a low carbon footprint.
