Village Maid Cheese have taken their multi-award winning Spenwood Cheese recipe to the next level, swapping out the classic Ewe's milk for Guernsey cow's milk, giving this stunning cheese its beautiful golden sheen.
Matured for at least 4 months with a thin, natural rind, its mildly savoury and super moreish, with a subtle umami tang and a gentle caramel sweetness to the finish. Often compared to a Pecorino, Manchego or even a Parmigiano Reggiano, it has a well developed nutty flavour and a slightly crumbly texture.
Use as a British alternative to parmesan, or serve with a full-bodied red wine.
