One of the leading lights of British charcuterie, Curing Rebels have been producing their inspired produce in Brighton since 2020. Their specially reared native breed pigs are raised just 12 miles away from their HQ, where they're free to roam and graze around the South Downs, producing an incredible layer of fat that's ideal for charcuterie. They hand cure and air dry their meat in small batches, delivering unparalleled quality and flavour.
