Village Maid Cheese make their wonderfully rich semi-soft Barkham Blue with pasteurised Guernsey cow's milk and a vegetarian rennet. Moulded in an ammonite round and slated in brine, it matures for up to 5 weeks to allow the blue moulds to thrive.
The end result is a rich and buttery blue cheese with a subtle sharpness that doesn't overpower the palate, with a natural greyish blue rind that gives an earthy flavour and slight hint of bitterness. The Guernsey milk provides a smooth and rich texture, with naturally high butterfat and carotene giving a gorgeous golden hue to the cheese.
