What is Bungay Butter?

Bungay Butter is a traditional raw butter made from the rich, unpasteurised milk of Montbéliarde cows, which graze on the lush meadows of Fen Farm Dairy in Suffolk. The cows’ diet, paired with the natural methods used in production, results in a butter that’s full of character, with a depth of flavour that sets it apart from standard butters.

The butter is cultured, which means it has a slightly tangy flavour that complements both sweet and savoury dishes. Whether spread over fresh bread or used to finish off a sauce, it offers a luxurious, creamy taste that’s hard to beat.

How is Bungay Butter made?

The process starts with raw milk from Fen Farm’s Montbéliarde cows. This milk is not pasteurised, meaning it retains its natural enzymes and nutrients, giving the butter its distinctive character. The cream is separated from the milk and left to culture naturally, allowing beneficial bacteria to develop. This process creates a butter that is more digestible and has a unique, tangy flavour.

The cultured cream is then churned slowly in small batches, which helps preserve the flavour and texture. Once churned, the butter is carefully kneaded and shaped by hand. The result is a beautifully creamy butter with a smooth texture and a rich, complex taste.
