Sourced by DukesHill from the famous Test & Itchen rivers in Hampshire, slow grown trout fillets are hand filleted, dry cured and kiln smoked for up to 10 hours to deliver a beautiful texture and dleicate flavour. Once smoked, they're matured for a few days in a Himalayan salt chamber to add final depth.
Holders of a prestigious Royal Warrant since 2003, DukesHill began producing their mouthwatering Wiltshire hams back in 1985, strictly adhering to traditional curing and smoking methods to create a showstopping table centrepiece for any special occasion.
