A dream cut for budding pitmasters, this Old Spot Boston Butt from Primrose Herd is perfect for making your own pulled pork. Cut from the shoulder joint, it releases bags of flavour after a long, slow cook. Dry rub with salt and pepper, and smoke or roast at a super low temperature, and always cook to temperature, not time - you're aiming for min. 90 degrees celsius.
