At Farmfetch, we're always excited to introduce new and exceptional producers to our audience. Today, we shine the spotlight on The Slow Vinegar Company, a remarkable artisan producer now listing their unique, and incredibly delicious, range of vinegars with us.
The Slow Vinegar Company, based just outside Frome in Corsley, Wiltshire, began as a creative venture by a duo with a passion for food culture and a strong background in art and design. Having taught in higher education for many years, they channeled their creativity and curiosity into mastering the art of vinegar making. Inspired by the exquisite artisan wine vinegars they encountered during their travels, they embarked on a journey to craft their own high-quality vinegars.
The Slow Vinegar Company's vinegars are made through a meticulous and time-honoured process. Natural produce is transformed through two fermentations into complex, balanced wine vinegars. The process involves:
- Gathering Roots & Fruits, Berries, and Blossoms: The journey begins with the careful selection of natural ingredients.
- Fermenting into Alcohol: The first fermentation transforms the sweet produce into alcohol.
- Resting: The alcohol rests, developing its initial flavours.
- Fermenting Again into Acetic Acid: The second fermentation converts the alcohol into acetic acid, creating vinegar.
- Resting & Bottling: The vinegar is allowed to rest, enhancing its depth and complexity, before being bottled.
Their vinegars are unpasteurised and contain the mother, ensuring a rich and vibrant taste in every drop.
