    A great alternative to turkey

We cooked our 3kg joint for an hour on high in the top oven and then three hours on low in the simmering oven and then another hour back in the top of the Aga to crisp up the crackling. I did have a double layer of foil on for part of the cooking time to stop the crackling burning. Oh yes, half an hour resting time before carving. It couldn't have been more perfect. Everyone, including the children, loved it. Everyone was trying to guess what the herbs used were. It fed 5 adults and two children very nicely. The crackling was melt in the mouth perfect. I don't recall anything by way of leftovers though. It arrived on time wrapped up to keep cool on its journey over to us in Hereford. Yes I know we should be having beef but decided that will be for tomorrow. New Year's Day. As for the turkey crown, it is in the freezer ready for now.
