The Carolina Reaper has a fearsome reputation as one of the hottest chillies in the world, but that hasn't stopped the Welsh Smokery from harnessing the heat to create an epic Carolina Reaper Smoked Chilli Jam.

They slowly smoke their chillies to enhance the flavour, but that does nothing to tame the heat - this seriously hot jam is fantastic with cheese and burgers.

The Welsh Smokery (or Welshhomestead Smokery to give it its full name) is an award-winning smokehouse set on the edges of the Welsh Cambrian Mountains.

Using what they call the ancient magic of cold smoking combined with the latest technology, Claire and her team at the smokery create unusual flavour combinations infused with the simple taste and smell of woodsmoke.
